All-Natural Fruit Vinegars

To compliment our distinctive pumpkin seed oil, Austrian chefs suggest these unique all natural vinegars. They have been masterfully produced resulting in a delicate flavor and aroma with an acidity level of only 5%! They are made from 100% pure fruit juice or honey with no added flavor, color, or aroma enhancers. Because of this, like a good wine, variations occur from vintage to vintage and even from batch to batch, but we promise you they are Austria's Finest, Naturally®!

Black Currant Vinegar
A truly remarkable Vinegar! Made from "Bio*" Black Currant berries that are pressed and then masterfully blended into a light fruity vinegar with only 5% acidity.

Schilcher Wine Vinegar
A well-kept secret specialty of the Steiermark is the "Blaue Wildbacher" grape and the "Schilcher" wine that is made from it. A wide variety of distinctive products, including this vinegar, are made with this wine as their base. Austrian connoisseurs love to blend it with the Pumpkin Seed Oil for use in their favorite recipes.

Honey Vinegar
A specialty of Austrian Bee Keepers is making the ancient drink Met (Mead in English). They discovered that by taking the process a few steps further, they could produce a mildly sweet vinegar. Especially popular blended with pumpkin seed oil over Summer salads.

2003 Release Proprietor's Reserve Italian Balsamic Vinegar
This fine Balsamic from the Modena Region of Italy is made from the purest traditional ingredients and aged in a series of wooden barrels. Because it is only aged for four years we cannot call it "tradizionale", but in all other aspects it is traditional! Chefs and Connoisseurs agree that this balsamic has the flavor and characteristics of more expensive varieties.

Balsamic Vinegar:

James Balsamic Vinegar
Several years ago our vinegar maker traveled to Italy to learn the secret of making Balsamic Vinegar. When he returned to Austria, he used the native varieties of grapes to make "Austrian Balsamics", and eventually began to experiment by using the process on other fruits to create exciting flavors. The "James Grieve" apple is best suited to for this process. Characterized by its low acidity and sugar content and incomparable apple aroma and flavor, only a few drops of this rich vinegar is needed. Use to: marinate fish, meat, fruits, and vegetables; drizzle over blanched vegetables; on blue cheese; on pies and chocolate cakes; over cold, thinly sliced roasts with onions and oil; over carpaccio; on fresh apples (or peaches or strawberries) with fresh ground pepper, salt and extra fine pumpkin seed or olive oil; 1-2 tbsp. Vinegar in 8oz mineral water, or a few drops mixed with sparkling wine.

Elderberry Balsamic Vinegar
This intensely fruity vinegar offers a rich sweet-tart flavour. Like all of our Gourmet Excellence Series Vinegar, a few drops is all you need. Chef's recommend it be used to: Marinate game birds (especially goose and duck) and fruits; Drizzle over blanched vegetables, hard cheese, pies, chocolate cakes, ice cream, and crepes filled with cream cheese; Refine sauces, 1-2 tbsp. Vinegar in 8 oz mineral water or sparkling wine.

Plum Balsamic Vinegar
This is a delightful warm weather treat. The finest prunes are gently boiled down, double fermented, and matured for at least 5 years using the Balsamic technique. With it's incomparable aroma and flavor only a few drops of this rich vinegar are needed. Best used with omelets & egg dishes, and incorporated into sauces & marinades for meat, seafood, and poultry. Great on crapes, and drizzled over fruit and cream desserts.

Quince Balsamic Vinegar
Quinces from Lower Austria are gently pressed, slowly boiled down, and then masterfully fermented before undergoing the Balsamic aging process. The result is an interesting harmony between sweet and sour. Especially good with fish dishes, souses, and green salads.

White Wine Vinegar "Blaufrankisch"
Another Austrian favourite! The choicest grapes produce an exceptional wine. Then, our master vinegar brewer carefully ferments it again to produce a remarkable vinegar. Aged in oak, this rich full body vinegar is smooth and will enhance pork, chicken, fish, or meat dishes. Great over green salads too!

Red Wine Vinegar "Zweigelt Spatlese"
This is an exceptional white wine vinegar! What sets it apart? It is made from a special sweet late harvest "Spatlese" Zweigelt wine and then aged in selected wood kegs. Trockenbeerenauslese "TBA" (Bio*)
Trockenbeerenauslese is a term used denote a superior late harvest wine. A premium Bouvier Wine, grown under Austrian "Bio" supervision is used to create this exceptional vinegar. After careful fermentation it is aged in oak barrels until mature. The result: a wonderful harmony between acidity and sweetness! Like all of our Gourmet, Excellence Series Vinegar, a few drops are all you need. Chef's recommend it be used with salads, chicken salads, fruit desserts, crepes filled with cream cheese, marinated fish, poultry, and vegetables; Drizzle over ripened cheese or chocolate and fruit desserts.

Noble Aceto "PX"
This special vinegar is produced using the finest Pedro Ximenez grapes fermented and matured in small oak barrels under carefully controlled conditions. During decisive periods the Master Vinegar Brewer is present around the clock. According to protocol, this product is not considered vinegar, since it contains less than 6% acidity. Excellent enjoyed pure. Best served slightly cooled in small liquor glasses. We recommend consumption of this delicacy as an alcohol free finish to a meal. Kept sealed in a cool dark place and it will continue to mature!

This revolutionary vinegar is created by double fermenting Red Pepper juice and carefully maturing it in glass carboys. Puntigam Beer (Malt) Vinegar
Beer from the Steiermark's acclaimed "Puntigamer" brewery has been double fermented and aged for several years in oak barrels to obtain this distinctive vinegar. Chefs suggest that it be used to make radish, celery, or potato salads, drizzled over Cold-Thinly Sliced Roasts, soups, poached fish, or fried potatoes.
